A series of ion-exchange resins and fibers for obtaining of heterogeneous catalysts on the basis of inulinase from Helianthus tuberosus has been suggested. Perspective carriers for the adsorption immobilization of the enzyme, KU-2and KU-2-8chS resins, were revealed, allowing to maintain up to 80,4% and 42,6% of the starting enzyme activity, respectively. The physicochemical and kinetic properties of the heterogeneous preparations were investigated. It was established that KU-2-, KU-2-8chS- and AV-17-2P-immobilized inulinase from H. tuberosus displays the maximum catalytical activity within the temperature range 60—70°С and рН from 5 up to 7. A comparative analysis of the V(S) curves and values of the basic kinetic parameters of the inulin hydrolysis by the heterogeneous enzyme preparations shows that the greatest affinity to substrate is characteristic of the enzyme adsorbed on the cation exchanger of KU-2. Extracts of some inulin-containing plants were tested as substrates for the KU-2-immobilized inulinase. It was shown that the KU-2-immobilized inulinase preparation from H. tuberosus has the maximal catalytical capacity during the hydrolysis of topinambour, chicory and devyasils extracts, which are therefore perspective raw materials for the industrial enzymatic production of fructose.
