Physicochemical properties of multicomponent biocatalysts for triglyceride ester interchange prepared by the inclusion in xerogel of silicon dioxide of partly or completely destructed cells of a recombinant rE.coli/lip strain that produces a thermostable lipase from Thermomyces lanuginosus have been studied. A function and optimum contents of biocatalyst-introduced components (whole cells or cell lysates, water, water-retaining agents and nanostructured carbon forms (carbon nanotubes, nanospheres)) were investigated. The optimum composition of the biocatalysts prepared on the basis of rE.coli/lip cell lysates with enzymatic activity in water-free media was selected. When butter-fat mixtures are subjected to ester interchange in a flow-type packed-bed reactor, the time of half-inactivation of the prepared biocatalysts was ~70 h at 70—75°C.
