A new Saccharomyces cerevisiae-G strain has been shown to have an inulinase activity, synthesizing both intra- and extracellular inulinases with a significant prevalence of the first. The strain also demonstrates high baking properties (lifting force 38—40 min; maltase activity of 32 min; high osmotic resistance, biomass productivity, and others). Using RT-PCR, it was confirmed that the inulinase gene expression occurs in the strain and depends on used carbon source.
